Took it easy today and made this green tea lemonade served with vegetable rolls from Fresh Market. It was very refreshing for and after bike ride treat. I substituted Xyla for the honey. We all enjoyed.
I am a sweet potato fan so when I saw this recipe for Honey-Lime Quinoa Stuffed Sweet Potatoes by cooking classy I just had to give it a try. It was definitely worth the try. This takes basic staples I keep on hand and turns them into this wonderful bite that I can only describe as a piece of sweet potato bliss. I did leave off the cheese and sour cream, but no one felt it needed anything more. This recipe was so good I know I’ll probably repeat at least once more by Sunday.
OK. My camera and I just might have to get divorced because this time my pix were way too dark. I love zucchini, but the family and I didn’t too much care for the Pesto Zucchini Bites I found here. They probably would be good as an appetizer, but as a side dish more than two is too many. Maybe our pallets are just not refined enough.
Today’s recipe was a quick smoothie found here. I was a little nervous about the dates this combination, but it added texture and a little sweet without tasting sugary. All 4 of us gave this thumbs up. It’s a winner and just may make it into our go-to recipe book. Pic was take with my iPhone in a hurry this morning.
You’re just gonna have to trust me when I say these things turned out beautifully this morning because somehow I lost the pictures on my brand new camera some time between breakfast and now. I think the battery died. I’m really not sure how that can cause pix to disappear, but it did.
Anyway… I made wonderful Tostadas for breakfast inspired by a recipe found here. I decided to use a little creativity in order to cut time by making scrambled cheese eggs and stacking beautifully with the tomato and avocado atop the baked tortilla. I wish I could show you my masterpiece, but the images are lost somewhere in the recesses of my cameras memory. I was soo proud not only of my food, but of the great work I did with the camera. I even got a picture of a thumbs up from my cutie pie 10 year old daughter. The family was split on the decision as to whether they tasted as good as they looked. Two of us gave it an OK with side thumbs while two gave thumbs up. I’m just glad there were no thumbs down on my first day. I’m sure they will come later.
I, as most of my friends on Pinterest, have a huge food/recipe board filled with all the yummy looking things that will fit into my new found vegetarian lifestyle. I’ve hunted far and wide throughout the internet to find these mouthwatering recipes, but rarely reference them again finding myself standing in front of my pantry each evening wondering what the heck to cook feeling rather defeated by the choice to go with one of a handful of staples due to the sheer fact I don’t really want to exert too much energy into the thought of dinner.
I’ve decided to challenge myself to prepare all of the over 300 foods from my Pinterest food board within the next year. I’m hoping to spark a new excitement for cooking and discover some new go-to recipes along the way.
